Respected local Chef presents to Students

Jamie Jones

 

Jamie Jones from Yalbury Cottage Hotel and Restaurant, recently came into school to demonstrate to year 10, 11, 12 and 13 food students how to create spectacular dishes using creative garnishes and decorations.  Jamie showed us how to make various purees, chocolate decorations, different flavoured jus, and even how to make the perfect mashed potato, with which he demonstrated his famous whoosh….!


Students and teachers alike, were all inspired to go away and ‘build a plate’, to make our dishes look more enticing, appetising and colourful.  Our special thanks go to Jamie, who took considerable time and effort to prepare for this very informative hour long demonstration.

Vanilla Yoghurt

Vanilla yogurt panna cotta with poached rhubarb and meringue shards

Plaice

Poached stuffet fillet of plaice on a bed of fennel, topped with julienne carrot and baked fish skin

Mackerel

Fillet of Mackerel with red pepper reduction and carrot and fennel ribbons

Hake

Pan fried hake fillet with watercress sauce and pureed potato
